Back in 2011, award-winning restaurateur and cookery school owner Giancarlo Caldesi was diagnosed with Type 2 Diabetes, and suffering from painful joints, depression and being overweight. Together with his wife, Katie, they were determined to combat the diabetes by reducing his food portions and cut down on his sugar intake. But it was all to no avail. 3 years later, his blood sugar count was still far too high, and he continued to be overweight. A further blow was delivered to Giancarlo when nutritionist Jenny Phillips diagnosed a severe gluten intolerance, meaning he’d have to give up the pizza, pasta and bread! For over 60 years, Giancarlo was proud of his Italian food heritage and enjoyed pasta daily: now he’d have to find a new way to enjoy food.
It was his determination to enjoy the food he needed to eat that made him view this as a challenge he could relish, and he soon revelled in creating gluten-free pasta and finding alternatives to use for bread, dough and pizza. Without even realising it, both Katie and Giancarlo were following a low-carb diet. Waiting for them was a welcoming community who followed the same way of life, and soon Katie began to exchange ideas with Dr David Unwin (if you recognise his name, that’s because he wrote the foreword for the second edition of our “Primal Cure” book).
Katie, Giancarlo and Jenny Phillips teamed up to create the extremely tasty, and exceptionally healthy recipes in The Diabetes Weight-loss Cookbook, which includes recipes like walnut and parmesan seeded rolls, courgette-based pizza, peanut butter and jelly cake, plus a whole section dedicated to pasta-alternatives to enjoy with a range of homemade sauces.
