If you've previously made my Posh Primal Chicken Korma Pizza and loved it, but fancy something a little bit easier, then this recipe is a perfect alternative. With just 8 ingredients (including the base), these low carb pizza's are a great recipe to inspire and get the kids involved with.

Low carb pizza

Don't worry, when it comes to flavour, these pizza pancakes taste just like a normal thin-crust pizza - thanks to its cheesy and meaty chorizo toppings. So while this recipe may have very little carbohydrates, you have no need to worry that it will lack flavour. None whatsoever!

Pancakes are the latest craze to my kitchen at the moment and what better way to mix things up and make them savoury. These chorizo pizza pancakes are low carb but high in fat which means they'll leave you feeling fuller for longer.

How to make low carb pancakes 

It's quite obvious that you cook these low carb pizza's exactly how you would cook pancakes, but the secret to getting these cheesy pizza's just right is by waiting long enough to flip them.

You'll start by creating the cheesy pizza mix by adding 2 different types of cheese to a bowl and mixing them together with two eggs. Once mixed, you'll heat a pan with a little oil and add your pancake mixture to the pan and cook like you would a pancake - cooking 4 minutes per side before flipping.

Once the pancakes are formed (this recipe serves 2), you'll then add your chorizo slices, mozzarella, tomato sauce and chilli flakes before placing your pizza's in the oven for 5-10 minutes (or until the mozzarella has melted). Once cooked, you can serve straight away!

Low Carb Chorizo Pizza Pancakes

Serves: 2 pizzas 
Prep time: 5 minutes
Cook time: 15 minutes


  • 2 whisked eggs
  • 112g grated cheddar cheese
  • Pinch oregano
  • 30ml grated parmesan cheese

Pizza toppings

  • 2 tbsp tomato puree/paste
  • 8-10 slices of chorizo (4-5 slices per pizza).
  • 1-2cm mozzarella cheese per pizza (cut or torn into small pieces).
  • Basil to garnish. 


Preheat your oven to 200c. 

Begin by adding the eggs, cheddar and parmesan cheese and oregano to a bowl and mix everything together. 

Preheat a pan with a little oil. Add half of the mixture to the pan and heat on medium heat for 2-4 minutes (or until your pancake starts to form bubbles). Once the bottom of your pancake has cooked, flip your pancake over and repeat the same cooking process on the other side. Once cooked, gently slide the pancake out of the pan and onto a baking tray. Repeat this process with the second half of your pizza mixture.

Once both pancakes are cooked, add 2 tbsp of tomato sauce to each pizza and top with the chorizo slices and mozzarella cheese. You may wish to season with pepper and salt if you choose to.

Pop the pizza's into the oven and cook for 5 minutes (or until the cheese has melted on top). Remove from the oven and garnish with basil and serve.
