Low carb grilled pork with peach salsa

Now that the weather has turned warmer and we've taken to outdoor dining, I'm all about light & refreshing dishes that use an abundance of beautiful flavours to uplift us.

This low carb grilled pork recipe comes in two parts, technically. Firstly, you have the beautifully smokey grilled pork which can be cooked on either the BBQ or a grilled pan, and secondly the refreshing and vibrant peach salsa.

This recipe is juicy, bursting with flavour, light & high in protein to help leave you feeling full and satisfied. If you don't have any peaches on hand, then pineapple or mango will work just fine. In fact, you might just love my prawn & mango salsa burrito bowl recipe too.

How to make Low Carb Grilled Pork with Peach Salsa

First things first, you'll season the pork just before grilling. I personally like to use a grilled pan for this recipe unless it's the weekend when I can enjoy a sunny BBQ.

Secondly, you'll slice the peaches in half and add them to the oiled pan (face down) along with the pork chops. Fry the peaches for 5 minutes, or until they're golden and fry the pork chops for roughly 5 minutes per side. Once the peaches are done, remove them from the pan and set aside.

While the other side of the pork chop cooks, you'll assemble the peach salsa. Simply add all ingredients to a bowl and mix. Once the peaches have cooled, cut them up and add them into the bowl too.

Once done, remove your pork chops from the pan and serve on a plate along with a generous serving of the peach salsa.

Whether you choose to cook the pork chops on the BBQ, or in the kitchen, you'll love this low carb pork and peach salsa recipe!
