Packed with healthy fats, this tasty green omelette made with spinach and stuffed with salmon is the perfect keto dish come breakfast, lunch or dinner!
I never thought the day would come where I would find myself craving a green omelette for lunchtime, but here we are. I whipped up this tasty and keto-friendly recipe yesterday and if I'm totally honest, it's got to be the most flavoursome omelette I've had in a long time!
This recipe would also make an awesome breakfast, especially if you're keen to up your veggies in the morning but don't quite fancy a handful of spinach straight off the plate! Thankfully, this tasty omelette hides all evidence of spinach and if anything, boasts a beautiful cheesy flavour thanks to the addition of cheddar.
How to make a green omelette
To make my green omelette recipe, simply add spinach, cheddar cheese, parsley, milk, ghee and a hint of chilli to a food processor (I use our Primal Slender Blender Pro) and blitz everything together. Once the spinach is finely chopped, add 4 eggs to the mixture for one final blitz and season with black pepper and salt, of course.

When it comes to cooking my omelette, heat a pan with a little ghee. I like to add about a tablespoon of ghee to a pan, swirl it around until melted and then drain the excess back into the pot.
Once your pan is heated, add half of your green omelette mixture to the pan (serves 2), and swirl it around. Let it cook for a few minutes on low/medium heat and swirl the pan again to move any excess liquid to the edge of the pan. Continue to do this until you no longer have any liquid sitting on top of your omelette. Once you've done that, top half of the omelette with the spinach, feta and avocado and then carefully flip the other side of the omelette over. Remove from the pan carefully and serve up. Pstt, I like to season mine a little more with black pepper.
To finish off my easy and tasty keto omelette, top it with flaked salmon, feta cheese (yes, more cheese) and half an avocado for a truly creamy flavour. I personally recommend this combination, but feel free to play around with your own toppings.
Easy & Tasty Keto Green Omelette
Bursting with flavour, this green omelette is stuffed with flaked salmon, avocado and crumbled feta cheese. It's the perfect keto, grain-free recipe.

- 60g spinach
- 30g cheddar cheese
- 1 tsp chilli flakes
- 2 tbsp ghee
- 1/4 cup parsley
- 1/3 cup full-fat milk
- 4 large eggs
- Salt and black pepper to taste
- 2 salmon fillets (1 per omelette)
- 50g feta (25g per omelette)
- 1 avocado (1/2 per omelette)
Begin by adding the cheese, milk, 1 tbsp of ghee and parsley to a food processer and blitz altogether. Add the eggs and blitz once more. Add the chilli flakes and salt and pepper and mix everything together.
Heat a pan with a little ghee. Once warm, add half of your mixture to the pan and swirl it around. Let it cook for a few minutes on low/medium heat and swirl the pan again to move any excess liquid to the rims of the pan. Continue to do this until you no longer have any liquid sitting on top of your omelette. Once you've done that, top half of the omelette with the spinach, feta and avocado and then carefully flip the other side of the omelette over and remove from the pan.
Repeat this process again for the leftover mixture.
