With the warmer months on their way, you'd be a fool not to surprise friends and family with our easy low carb blueberry muffin recipe.

Moist, grain-free, light and moorish, these muffins may be my favourite recipe this summer. And the best thing? They're packed full of goodness from the likes of coconuts and almonds. 

To make these muffins Primal friendly, I switched out your regular flour (which most muffin recipes call for) for something much healthier: ground almonds (aka almond flour). This makes the recipe high in healthy fats (monosaturated fats - great for heart health) and low in carbohydrates - meaning that these muffins will leave you feeling fuller for longer whilst providing your body with nutritional benefits.

As for the blueberries, if you're not a fan then swap them for your favourite berry. Fresh strawberries and raspberries would make a delicious alternative! 

So next time you have a spare half an hour, give this quick and easy delicious low carb blueberry muffin recipe a whirl! 


Dry ingredients

115g almond flour

1/8 tsp baking soda

Pinch salt

Wet ingredients

2 tbsp honey

115g cup coconut milk

20g melted coconut oil (find our coconut oil here)

1 room temp egg

Separate ingredients

1/4 cup fresh blueberries (not frozen - this will provide too much water for the muffins)

Handful flaked almonds for topping


Begin by preheating your oven to gas mark 4.

In one bowl, mix together the dry ingredients. In a separate bowl, mix together the wet ingredients.

Using a rubber spatula, mix the wet and dry ingredients together. Be careful not to over mix, however. Once mixed, add the blueberries and fold in.

Pour the mixture into your greased muffin tray - making sure to bring your mixture to the top of each muffin hole. Add a sprinkle of flaked almonds to each muffin and pop in the middle of the oven to bake for 20 minutes (or until a knife comes out clean).

Once cooked, remove from the oven and allow to cool completely. This is important otherwise the texture of the muffin will appear somewhat raw.
