These easy sandwich bread rolls are made with konjac flour, which contains glucomannan, for a satisfying carb free recipe.
If you've been searching for a sandwich/bread roll recipe that's quick to make, accessible (ingredients wise) and tastes good, then you've come to the right place. Using our brand new Fibrehydrate Konjac flour (which you can buy on it's own, as a bundle or even subscribe to), this recipe means you can finally enjoy one of your favourite carb foods again: bread.
By now you might be wondering two things. 1) what is konjac flour? and 2) how is a bread recipe carb free? Konjac flour is simply a flour high in viscous fibre made from the konjac root. It also contains glucomannan which some of you may have heard of before and is free from carbs and fat. Therefore, in order to make this bread roll recipe suitable for those following a low carb diet, I've swapped traditional bread flour for konjac flour which, when paired with certain ingredients, works brilliantly to make a low carb alternative bread recipe.
Compared to some low carb bread roll recipes, this one is easy to make and contains fewer ingredients. It also doesn't contain almond flour or coconut flour, which I know some people choose to avoid when it comes to savoury recipes. This recipe makes for sturdy rolls which hold together well and don't fall apart.
To add a little flavour, I've added a hint of fresh chilli, but feel free to skip this ingredient or swap it for something else. The same goes for any herbs too. When putting together your dough balls, you will find them slightly sticky. I recommend greasing your hands a little with non-stick spray or butter.
Carb Free Sandwich Rolls Made With Fibrehydrate Konjac Flour
- 4 tsp Fibrehydrate Konjac flour
- 1 tsp baking powder
- 2 1/2 tbsp flax meal
- 1 cup grated cheddar cheese
- 3 large organic eggs
- 1 tbsp extra virgin olive oil
- 3 tbsp water
- 1 tsp finely diced red chilli
Pre-heat the oven to 190c.
Using a kitchen mixer, add the eggs to the bowl and beat until fluffy. Add the oil, chilli, water and baking powder and mix again.
While the mixer mixes on a medium to low speed, slowly add the flour tsp by tsp.
Once the mixture starts to leaves 'waves' in the dough, add the cheese, mix once more and then stop.
Grease a baking tray with a little bit of butter and then shape the dough into 12 bread rolls. Place them onto the baking tray and put in the oven to bake for 12-15 minutes.
Once cooked, remove the rolls from the oven and leave to cool. Slice and enjoy with a dollop of organic butter and your favourite filling - try some fresh cooked chicken!
