Whilst the weather may be a little dreary here in the UK, it doesn’t mean that our plates have to look the same way. Why not mix things up a little and bring some citrus passion to your regular salmon dish?

I love salmon. It’s a brilliantly high omega 3 fish that’s packed full of nourishing health benefits. Personally, my favourite way to cook salmon is to pan fry it for a crispy, flavoursome finish and recently, I experimented a little with a marinade that sparks a brilliantly sweet flavour and I have to say, it went down a treat with my family.

If you were to ask me to pick my favourite part of the dish, from the crisp salmon edges to the sticky sweet honey and orange sauce, I think I’d have to be greedy and pick both! You really can’t beat a marinade that manages to bring a little bit of summer to your kitchen.

My suggestion for the marinade is to let it soak into the salmon for a fair few hours (overnight would be even better) as this really boosts the flavour of the dish.

Like most of my dishes, this recipe is incredibly simple to whip up (if prepared for in advanced) which means it certainly makes for a great weekday dish. Why not get the kids involved too? Get them to help with the marinade and shake the bag around. I always find getting the kids involved with the cooking helps to ease them into different flavours, textures and foods (they simply become interested in the food and are more likely to try various things!).

The pairing of the salmon and aubergine also works incredibly well. Finish them off with a side of veg (I’ve used a stir fry veg mix) and you’ve got yourself a healthy and hearty dish that’s full of all the good stuff – including the good fats and protein!

Crispy Glazed Orange Salmon With Sticky Aubergine

A delicious, citrus packed meal that's healthy, hearty and full of all the good stuff!

  • 1/4 cup Juice from half an orange Organic
  • 1 clove Garlic Grated
  • 2 fillets Salmon Organic
  • 1 tbsp Honey Organic
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Chilli Flakes Optional


  • 2 tbsp Soy sauce Reduced salt and sugar
  • 1 tbsp Honey Organic
  • 1 tbsp Extra Virgin Olive Oil


  • 220 grams Veg mix Green veg works the best!


  1. Begin by pre-heating your oven to gas mark 4.

  2. In a bag, add your salmon fillets and the ingredients for the salmon and shake well. Pop the bag into the fridge to marinate for a few hours/overnight. 

  3. When you're ready to prep your meal, slice your aubergine in half and score it with criss crosses.

  4. In a bowl, mix together the aubergine sauce and then pop this on top of the two aubergine slices. Pop them onto a tray with foil and cook for 30 minutes in the oven. After 30 minutes remove from the oven and set aside. 

  5. Heat a pan with extra virgin olive oil (make sure it's very hot) and then bring to medium heat. Add your salmon fillets, drizzle the rest of the marinade from the bag over them and cook on medium heat. After 10 minutes, flip the both fillets onto the other side and continue to cook until soft pink.

  6. Whilst the salmon fillet's fry in the pan, cook the green veg by boiling or frying the veg and leave to simmer (once cooked) until the salmon and aubergine are ready to serve.

  7. When you have just 5 minutes left of cooking the salmon, add the aubergines to the pan and fry them until you get a charred topping. 

  8. Once the salmon and aubergine are fully cooked, serve them up with the veg, sprinkle with pepper and tuck in!
