Health benefits of liver
It might come as a shock, but this once popular and treasured meat is packed full of nutritional benefits. Not only is it rich in protein, but it's low in calories and boasts a decent amount of vitamins and minerals.
But despite its decrease in popularity, liver is still one of the most nutrient-dense foods on the planet. Better yet, liver is cheap to buy and readily available at your local butchers. I don't recommend buying liver from your local supermarket - organic is best.
I decided to pair the lamb liver with chorizo for something a little different and finish the salad with a refreshing tzatziki dressing for extra zing, flavour and freshness.
When it comes to cooking liver, the trick is to stir-fry it quickly for a few minutes each side so it browns slightly and crisps on the outside whilst staying moist and soft inside.
I truly believe that, when paired with the right ingredients, liver can become a delicious addition to everyone's diet. So why not give it a go?
Chorizo & Lamb Liver Salad with Tzatziki Dressing
Serves: 1 person
Prep time: 10-15 minutes
Cook time: 5-10 minutes
- 2 lamb liver fillets
- 1 tbsp extra virgin olive oil
- 60g chorizo sliced
- A handful of baby leaf salad
- 2 lemon slices
- 1 tbsp mixed seeds
- Seasoning to taste
- 1 tbsp homemade tzatziki (see below).
Healthy homemade tzatziki sauce
- 240g full-fat greek yoghurt
- 1 cup cucumber - grated and squeezed dry
- 1 clove garlic, crushed
- 1 tsp lemon juice
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh chives, chopped
- Salt and pepper to season
Begin by making the tzatziki sauce.
Add all of the ingredients to a bowl and mix together until everything is combined. You may wish to do this in a food processor but it is not necessary if mixed well. Refrigerate for at least one hour before serving.
Add your baby leaf salad to a bowl and throw your sliced chorizo into a pan (you won't need any oil as we'll be using the oil from the chorizo). Heat on medium heat for 2-4 minutes until the chorizo starts to crispen. Remove from the pan and add to your salad bowl.
Using the same pan, add the lamb liver, season and stir fry on medium heat for 1-2 minutes. Flip and repeat on the other side. Once browed, remove the liver from the heat and add to your salad bowl. Add the mixed seeds, lemon slices and tzatziki sauce. Season some more if you please.
For a slight sweetness, you may wish to drizzle a small amount of organic honey over your salad, but this is optional.
