Freshly sliced avocado served on keto-friendly toast with an egg fried with an 'everything bagel' crust, this dish is anything but flavourless and it's incredibly easy to make too.

One of my favourite things in life is taking a classic and well-loved dish and making it grain-free that all keto & low carb lovers can enjoy too.

Runny yolk dripping onto keto bread that is toasted

We all know how easy the classic avocado and egg toast dish is to make, but in order to make this recipe even more delicious, I've used a popular American bagel seasoning that will truly bring your taste buds to life.

If you're yet to try the 'everything bagel' seasoning, then you're yet to live my friends. It's delicious, packed with flavour and provides that well needed 'crunch' us humans loved. No wonder American's go crazy for it! This recipe will show you how to make your own jar of seasoning which you'll then be able to use on your fried bread and egg.

I recommend buying a large organic, fresh & ripe avocado for this recipe. Avocados are a great way to start your day with as they're nutritious, loaded with heart-healthy monounsaturated fatty acids and packed with fibre. They also contain more potassium than a banana - a nutrient that most of us don't get enough of. Potassium helps maintain electrical gradients in your body's cells and serves various important functions.

To make your 60 second keto bread, all you'll need are the ingredients below (which you should already have in your kitchen if you're a regular Primal baker), a mug and a microwave! Once cooked, you'll turn your mug upside down, take the keto bread out and then fry it in a well oiled pan with a tablespoon of bagel seasoning. The rest of it is as easy as slicing an avocado and making a fried egg!

Avocado and egg on 60 second keto bread

Keto Avocado & Egg Toast Recipe

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 1
Keto bread
  • 1 large egg
  • 1 tbsp almond milk
  • 1 tbsp extra virgin olive oil
  • 1 tbsp coconut flour
  • 1 tbsp almond flour
  • 1/4 tsp baking powder
  • 40g grated cheese
  • Pepper to taste

Everything bagel seasoning (makes 1/2 a cup)

  • 2 tbsp chia seeds
  • 1 tbsp sesame seeds
  • 1 tbsp black sesame seeds
  • 1 tsp dried onion
  • 1 tsp dried garlic
  • 1 tsp Pink Himalayan salt

Mix everything together and store in a jar. You will need 2 tbsp worth of bagel seasoning for this recipe.

  • 1 large ripe organic avocado
  • 1 large organic egg
  • Rocket, sunflower seeds and spinach to serve (optional)

Begin by preparing your keto bread. Add all of the ingredients to a bowl and whisk together. Rub a microwaveable mug with a little oil and pour the mixture in. Gently tap the mug against the kitchen top and place in the microwave to heat on high for 60 seconds (keep an eye on it).

Remove your bread from the microwave, tip upside down and tap so the bread gently comes loose from the mug. Leave to cool whilst your prepare your avocado.

Gently slice your avocado in half and prepare as you please. I like to slice mine straight down the middle into long slices and push them out with a large spoon.

Once your bread has cooled, turn it on its side and slice in half (as pictured). Oil a frying pan and bring to medium heat. Add your keto bread to the pan and sprinkle a teaspoon of seasoning on top. Fry for 3 minutes before turning and sprinkling another teaspoon worth of seasoning on the other side.

While the other side toasts, crack an egg into the same (well-oiled) pan and sprinkle a teaspoon worth of seasoning around the edges and leave to cook.

Once the other side of your bread has toasted for roughly 3 minutes, remove from the pan and plate up. Add your avocado and any sides you wish and once the egg has cooked add it to the side also.
