Thanks to the gorgeously sweet and caramel like flavour from the Medjool dates, these almond butter stuffed dates coated in dark chocolate are the perfect sweet treat when you fancy something a little indulgent.
What I love most about this recipe is the fact it's free from any refined sugar, contains only 3 ingredients and tastes anything but healthy.

Thanks to their tender softness and sweet caramel like flavour, medjool dates are irresistibly delicious and are well known for being nature's 'candy'. They're also packed full of goodness including a significant amount of fibre and a variety of vitamins and minerals, including iron, potassium, B vitamins, copper and magnesium. Medjool dates also have significantly more calcium than other common varieties too.
How to make stuffed dates
When it comes to making these almond butter stuffed dates, it really couldn't be any easier.
You'll simply slit and de-stone each medjool date, stuff them with a little almond butter and seal them with melted raw chocolate before leaving them to set in the fridge.
I like to use 100% raw dark chocolate for it's health benefits, but feel free to use 80/90% if 100% will be too bitter for you. Although, it's worth mentioning that the sweetness of the dates and the creaminess of the roasted almond butter hides most of the bitterness from the dark chocolate anyway.

Almond butter stuffed dates coated in dark chocolate
Prep Time: 5 minutes
- 10 medjool dates
- 10 tsp smooth almond butter
- 90-100% dark chocolate
Begin by slicing the medjool dates lengthways and removing their stones. In the slit, add a teaspoon of smooth almond butter to each date and place on a wire rack.
In a microwave on medium heat, melt your chocolate in a microwaveable bowl.
Pour the melted chocolate over each date and once covered evenly, place in the fridge to set for an hour.
Once set, remove from the oven a add a touch of sea salt if you wish.
Dig in & enjoy!
Note: These dates are best kept in an airtight container in the fridge for a few days.
